Week 147: Rye sourdough loaf

It’s been many weeks since my last sourdough loaf, and poor #pangzhi has been cold-storaged, literally. Maybe that’s why he’s not happy and I ended up with one of the most dense and least airy loaf ever. 😔

Oh well, at least I got a chance to practice my scoring (I thought the scoring on this is not too bad) and healthy breakfast for a week.

I was trying for a 70% hydration loaf. Bulk at room temperature for 8 hours and in the refrigerator for a further 6 hours. Final proof in the refrigerator for 8 hours and at room temperature for a further 6 hours.
