Week 80: Fairytale rainbow cake

I am not a big fan of kids, but, I do love any reason to bake a rainbow cake. Since I will be bringing this cake to a “family” barbecue, where there is going to be a lot of little kiddies, I thought a fairytale-style decoration should be appropriate. So, here it is.

I went with my favourite cream cheese frosting for the cake layers and crumb coat. For this cake, I used 60g egg white, 60g granulated sugar, 120g unsalted butter, 120g cream cheese and 87g lemon curd. It is enough for thin layers of cream between the cake layers and a rather generous crumb coat, plus the piping around the top of the cake. For the frosting, I went with the stabilised whipped cream, tinted in multiple pastel shades. And I finished with a white chocolate glaze using 80g white chocolate, 80g heavy cream with 1g gelatine powder bloomed in half a tablespoon of water. Just before glazing, I added 6g of vegetable oil to give it that extra shine. Maybe I did not allow the glaze to cool enough as it was a bit more runny than I would have liked, but, it was not too bad. Add some dragerees and sugared stars and it’s a fairytale come true!
